Beer Soaked Steak Nachos

Nachos are a great dish to serve for guests. The strips of steak make this a more filling snack.


Serves 2
2 x 6oz rump steaks
1 bottle real ale
For the spicy bbq beans:
50g chorizo sausage, chopped
1 small red onion, sliced
2 garlic cloves, crushed
¼ red chilli, chopped
1 can baked beans
100ml beef stock or water
For the dressing:
200g FAGE Total
1 fresh lime
1 bunch coriander
Salt and pepper
100g tortilla chips
50g cheddar, grated (optional)

Serves 2
  1. Marinate the steaks in the beer for about 10 minutes.
  2. Meanwhile, gently fry the chorizo, onion, garlic and chilli.
  3. Add the beans and stock and simmer for 5-10 minutes.
  4. Juice and zest the lime.
  5. Chop half the coriander and mix with the yoghurt and lime.
  6. Season with salt and pepper.
  7. Place the nachos in an oval dish and warm through in the oven.
  8. Fry the steaks to your liking and leave to rest.
  9. Pour the beans into the middle of the Nachos. Slice the steak and place on the top.
  10. Garnish with yoghurt dressing and the rest of the coriander.
  11. Sprinkle with grated cheese (optional) and share.
