Blackberry, Lime & Yoghurt Pancakes with Toasted Coconut

Ingredients

300g FAGE Total

150g blackberries

1 tsp icing sugar

handful fresh mint, chopped

½ large lime, juice

1 x 6 pack of shop bought pancakes

1 tbsp toasted coconut shavings

    Steps
  1. In a bowl, combine the blackberries with the icing sugar, mint and lime juice. Refrigerate overnight (or for at least 3 hours).
  2. When ready to serve, combine the blackberry mixture with the FAGE Total yoghurt and serve on top of stacked pancakes. Sprinkle with toasted coconut shavings.
