Garlic Roasted Sautéed Mushrooms on Char-Grilled Ciabatta

A quick and easy lunch dish.

100g FAGE Total
200g mix of wild mushrooms
25g shallots, diced
1 clove garlic, crushed
2 crusty Ciabatta rolls
50g shaved parmesan
25ml olive oil
A sprinkle of chopped chives
Salt & pepper to taste

INSTRUCTIONS
  1. Clean and prepare your chosen mushrooms. Heat the oil in a pan and gently fry the mushrooms and shallots until tender. Add the garlic and cook for a further two minutes. Season to taste.
  2. Remove the mushroom mix from the heat and fold in the FAGE Total Yoghurt, chives and half of the parmesan.
  3. Cut the ciabatta rolls in half and grill until golden brown. Divide the mixture of mushrooms into four and spoon the mix on to the rolls. Sprinkle on the remaining parmesan.
