Mini Pistachio Yoghurt Ice Cream Sandwiches

These yoghurt icecream sandwiches will definitely impress, and are easier than they look.

FAGE Total is excellent for making a frozen yoghurt ice cream. This recipe uses it as a creamy ice cream sandwich filling topped with crunchy nuts. A great BBQ dessert or summer snack.

200g double cream
8 sweet waffle wafer biscuits
50g pistachios, crushed

INSTRUCTIONS
  1. Whisk the cream and yoghurt together until light and fluffy.
  2. With a plain nozzle, pipe onto the waffle biscuits and sprinkle with pistachios.
  3. Freeze for two hours.
  4. To serve, place one biscuit on top of another.
