Roast Vegetable, Feta & Yoghurt Moussaka

250g FAGE Total 0%

2 yellow peppers, sliced & roasted

2 red onions, cut & roasted into wedges

2 medium courgettes, sliced & roasted

1 aubergine, sliced & roasted

100g butternut squash, sliced & roasted

3 garlic cloves, crushed

500ml passata sauce

2 tsp dried oregano

1 small can butter beans cooked

1 egg, beaten

100g feta cheese, crumbled

Salt & pepper to taste.

    Steps
  1. Preheat the oven to 180°C / 360°F / Gas Mark 4.
  2. In a deep oven proof dish layer the roasted vegetables, garlic, passata sauce, oregano and butter beans and bake for 30 minutes.
  3. Mix together the FAGE Total 0% and beaten egg and season.
  4. Remove the dish from the oven and spread with the yoghurt and egg mixture. Crumble feta cheese evenly on top and bake for another 15 minutes, until golden.
