Roasted Rhubarb with Ginger & Orange

Top yoghurt with roasted rhubarb, ginger and orange.

Great as either a healthy breakfast or delicious dessert this easy to make rhubarb and ginger yoghurt recipe combines warm sweet fruit with cool and creamy FAGE Total Yoghurt.

800g FAGE Total
3 sticks rhubarb, washed and trimmed & cut into
4 cm lengths
55g golden caster sugar
2cm fresh ginger, peeled & grated
Grated rind & juice of 1 orange

INSTRUCTIONS
  1. Preheat the oven to 180°C/ Fan 160°C/ Gas Mark 4. Place the rhubarb in a roasting tin in a single layer. Sprinkle over the sugar and ginger. Drizzle over the orange juice and zest. Roast for 10 - 15 minutes or until the rhubarb is softened but still holding its shape. Divide the FAGE Total Yoghurt between four bowls and serve with the rhubarb and the remaining pan juices.
