Superfood Prawn Salad with Miso Yoghurt Dressing

This healthy prawn salad is packed full of flavour.

2 tbsp white miso paste
2 limes, zest & juice
1 red chilli, finely chopped
2 tbsp toasted sesame oil
300g raw peeled prawns
250g pack ready cooked quinoa
200g broccoli, thinly sliced
150g soya beans, defrosted
2 peppers, sliced

Serves 4
  1. In a wide shallow bowl, mix 1 tablespoon miso paste with the lime zest, half the chilli, 1 tablespoon sesame oil and 1 tablespoon water. Add the prawns and turn to coat. Heat remaining sesame oil in a large frying pan, add prawns and fry for 3-4 minutes, turning, until deep golden.
  2. Heat the quinoa according to pack instructions. Toss with broccoli, beans and peppers.
  3. In a separate bowl, whisk the remaining miso paste with 3 tablespoons water, the FAGE Total 0%, lime juice and remaining chilli. Add black pepper to taste.
  4. Add the prawns to the salad, drizzle with dressing and serve.
