Tangy Grapefruit Muffins

A treat for all the family.

These muffins are great as an alternative breakfast or packed-lunch treat. With a tangy citrus taste and moist cake texture from using our fat free FAGE Total 0% Yoghurt, one muffin just won't be enough!

125g FAGE Total 0%
2 grapefruits, scrubbed well
125g apple sauce
150g caster sugar
2 tbsp sunflower oil
3 tbsp sesame seeds, toasted
2 medium eggs
350g self-raising flour

  1. Heat oven to Gas Mark 4/180°C. Line a 12 hole muffin tin with paper cases.
  2. Grate the zest from both grapefruits into a large bowl. Squeeze 125ml grapefruit juice into a measuring jug and add to the bowl. Add the apple sauce, sugar, oil, sesame seeds, eggs and FAGE Total 0% to the bowl and mix well. Sift in the flour and fold through until combined.
  3. Spoon into the cases and bake for 20-25 minutes until golden and springy to the touch.
