Yoghurt Bubble & Squeak with Ham & Fried Egg

You can use up leftover mashed potato and cabbage or brussel sprouts to make this bubble & squeak rosti. Serve with ham and a fried egg.

50g FAGE Total
150g mash potato/roast potato
1 tsp chopped herbs
50g diced ham
50g sprouts or cabbage, cooked & chopped
1 tsp oil
2 whole eggs

INSTRUCTIONS
  1. In a large bowl mix the potato, herbs, ham and sprouts or cabbage together, then add the yoghurt to bind. Season to taste.
  2. Form the mixture into two patties and pan fry till golden brown.
  3. Fry or poach the eggs and place on top with the ham.
