Bacon, Spinach & Tomato Gnocchi Bake


170g FAGE Total

1 red onion, sliced

8 rashers smoked streaky bacon, sliced

250g baby plum tomatoes, halved

240g spinach

650g gnocchi

  1. Heat the oven to 190°C / Gas Mark 5. Heat a non-stick frying pan over a medium- high heat. Add the onion and bacon and cook gently for 5 minutes until the onion is soft. Add the tomatoes to the pan with 4 tbsp water and cook for 5 minutes until softened. Add the spinach to the pan and leave to wilt for a few minutes. Remove from the heat.
  2. Cook the gnocchi according to instructions, drain well and add to the tomato mixture with the yoghurt. Season well and stir. Transfer to a 1.5 litre ovenproof dish and bake for 15 minutes until bubbling.
