Lemon plumcake
Ingredients

3 eggs
100g sugar or sweetener
110ml vegetable oil
180g flour
1 teaspoon baking powder
120g FAGE Total yoghurt
2 tablespoons chia seeds
4 tablespoons lemon juice
2 tablespoons lemon zest

Steps
  1. First, mix together the yoghurt, chia seeds, lemon juice, and lemon zest, then set aside.
  2. Next, whisk the eggs with the sugar or sweetener until the mixture becomes light and frothy. At this point, add the oil and the yoghurt mixture.
  3. Now simply add the flour and baking powder.
  4. Pour the mixture into a loaf tin and bake in a preheated static oven at 180°C for approximately 45 minutes.
