Scrambled eggs with bacon

Ingredients

100 g FAGE Total Yoghurt

2 eggs

2 tsp black butter (available in specialty stores)

Pinch of salt

Pinch of ground white pepper

Fresh chives for garnish

2 slices of bacon

    Steps
  1. Pre-heat a small non-stick frying pan over low heat.
  2. In a small bowl, whisk together the eggs, yoghurt, salt and pepper.
  3. Cook the bacon for few minutes, then remove the bacon and cut into fine slices. Set aside.
  4. Add the eggs to the pan.
  5. Stir frequently with a heat-proof rubber spatula until thick and creamy curds form and no liquid egg is left. Do not overcook or the eggs will be tough.
  6. Serve immediately and garnish with the bacon and fresh snipped chives.
