Spiced Pork with Butter Bean Mash
100g FAGE Total
4 large pork chops
1 lemon, zest & juice
2-3 tsp Cajun spice mix
2x 400g cans butterbeans
- Rub the pork with 1 tbsp lemon juice and the spice mix. Heat a large frying pan. Add the pork and cook for 3-4 minutes per side or until cooked to your liking. Remove to a warmed plate. Add a splash of hot water to the pan, season and bubble for a minute.
- Meanwhile, put the remaining lemon juice, zest and 3 tbsp water in a pan, add the beans and heat gently for 3-4 minutes. Remove from the heat and mash well. Stir in the yoghurt, season and keep warm. Steam the broccoli for a few minutes until tender.
- Serve the mash with the pork, broccoli and pan juices.
