Spicy Tomato Soup, with Basil and FAGE Total Yoghurt

Ingredients

250g FAGE TotalYoghurt

90ml olive oil

1 onion, finely chopped

2 garlic cloves, finely chopped

150g white mushrooms, sliced

10 sun dried tomatoes

8 tomatoes, diced

3 tbsp vinegar

10ml white wine Leaves of 1 bunch of basil, finely chopped

Salt & pepper

5g sugar

½ tsp sweet paprika

    Steps
  1. Heat 2 tablespoons of olive oil in a deep pan and sauté the onion and garlic.
  2. Add the mushrooms and half of the sun dried tomatoes and sauté for 3 more minutes.
  3. Add the mushrooms and half of the sun dried tomatoes and sauté for 3 more minutes.
  4. Season well, add the sugar and paprika and simmer for 40 minutes.
  5. Mix in a blender with 2 tablespoons of olive oil. Add salt, if necessary.
