Spring Peas & Yogurt Topped Toast


Time: 5-10 minutes
Serves: 2

4 slices of bread of choice, toasted
125g FAGE Total 0%, 2%, 5%
240g fresh peas
2 tablespoons lemon juice
2 tablespoons fresh dill, chopped
1 tablespoon extra-virgin olive oil
Salt and pepper to taste

Pea tendrils 
Cracked pepper
Pickled red onion
Flaky sea salt
Red pepper flakes

  1. Bring a small pot of water to a boil. Add peas and cook for 2-3 minutes or until peas turn bright green.
  2. Immediately drain the peas and add to an ice bath for 3 minutes. Drain the peas.
  3. In a small bowl, combine peas, lemon juice, dill, olive oil, salt, and pepper.
  4. Spread yoghurt on top of the toast and add peas with its juice. Garnish with pea tendrils, pickled red onion, cracked pepper, salt, and red pepper flakes to taste.
