4 slices of bread of choice, toasted
125g FAGE Total 0%, 2%, 5%
240g fresh peas
2 tablespoons lemon juice
2 tablespoons fresh dill, chopped
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
Pickled red onion
Flaky sea salt
Red pepper flakes
- Bring a small pot of water to a boil. Add peas and cook for 2-3 minutes or until peas turn bright green.
- Immediately drain the peas and add to an ice bath for 3 minutes. Drain the peas.
- In a small bowl, combine peas, lemon juice, dill, olive oil, salt, and pepper.
- Spread yoghurt on top of the toast and add peas with its juice. Garnish with pea tendrils, pickled red onion, cracked pepper, salt, and red pepper flakes to taste.
