Vanilla Mugcakes

Ingredients

4 eggs
1 FAGE Fruits Vanilla yoghurt
120ml lemon juice
Zest of 1 lemon 
80g maple syrup
1 vanilla pod, seeds only 
200g flour
32g baking powder
200g blueberries
For serving: ½ FAGE Fruits Vanilla yoghurt 

    Steps
  1. In a medium-sized bowl, break the eggs and pour in the yoghurt, lemon juice, zest, maple syrup and after cutting the bean pods crosswise, the vanilla. Then add the flour and baking powder.
  2. Mix all the ingredients well until the mixture is uniform. Fold in a handful of blueberries.
  3. Fill each ramekin 2/3 full with batter and place in the microwave for 3 minutes at 1000W.
  4. Serve inside the ramekins, top with a dollop of yoghurt, some blueberries and lemon zest.
