270g kale, cleaned, stems removed and torn into small pieces
1/2 small radicchio, torn into pieces
1 avocado, sliced
200g grape tomatoes, halved
2 blood oranges, peeled and sliced
1 orange, peeled and sliced
1-ounce feta cheese, crumble
140g FAGE Total Yoghurt
60ml extra virgin olive oil
60g Dijon mustard
5 tablespoons lemon juice
4 tablespoons honey
1 clove garlic
Salt and pepper to taste
- Add yogurt, olive oil, mustard, lemon juice, honey, garlic, salt, and pepper into a food processor and blend until smooth.
- Place kale into a large salad bowl, drizzle half of the dressing and toss together. Let it sit for at least 10 minutes to marinate kale.
Top kale with radicchio, avocado, tomatoes, oranges, and feta before serving and add additional dressing as you please.
