Scrambled Eggs with Smoked Salmon

Scrambled eggs and smoked salmon are the perfect brunch combination.

200g FAGE Total
6 eggs
100ml milk
¼ bunch chopped chives
8 slices Scottish smoked salmon
4 multigrain muffins
20g butter
Salt and pepper to taste

INSTRUCTIONS
  1. Crack the eggs into a bowl and whisk with milk to make basic scrambled egg mix, season to taste.
  2. Melt the butter in a non-stick saucepan and pour in the egg mixture and cook until it scrambles, then fold in 100g of yoghurt, followed by the chives, set to one side to stay warm.
  3. Cut the muffins and toast on both side.
  4. Spread the toasted muffins with a think layer of FAGE Total yoghurt; arrange the smoked salmon on each muffin. Then dress with a spoonful of the scrambled egg.
