Spicy Prawn Jacket Potato

170g FAGE Total

4 baking potatoes

2 peppers, deseeded & chopped

2 tbsp massaman or Thai curry paste

250g raw peeled prawns

Handful coriander, roughly chopped

    Steps
  1. Heat the oven to 200°C / Gas Mark 6, prick the potatoes and bake for about an hour until cooked through.
  2. Heat a frying pan, add the peppers and fry for 3-4 minutes, add the curry paste and 4 tbsp water and cook for 5 minutes until soft. Add the prawns and cook for a further 2-3 minutes until cooked through. Turn the heat to low and add yoghurt. Stir and mix in the coriander.
  3. Spoon the filling into the potatoes and serve.
