Ingredients
2 x 6oz rump steaks
1 bottle real ale
For the spicy bbq beans:
50g chorizo sausage, chopped
1 small red onion, sliced
2 garlic cloves, crushed
¼ red chilli, chopped
1 can baked beans
100ml beef stock or water
For the dressing:
200g FAGE Total
1 fresh lime
1 bunch coriander
Salt and pepper
100g tortilla chips
50g cheddar, grated (optional)

Steps
- Marinate the steaks in the beer for about 10 minutes.
- Meanwhile, gently fry the chorizo, onion, garlic and chilli.
- Add the beans and stock and simmer for 5-10 minutes.
- Juice and zest the lime.
- Chop half the coriander and mix with the yoghurt and lime.
- Season with salt and pepper.
- Place the nachos in an oval dish and warm through in the oven.
- Fry the steaks to your liking and leave to rest.
- Pour the beans into the middle of the Nachos. Slice the steak and place on the top.
- Garnish with yoghurt dressing and the rest of the coriander.
- Sprinkle with grated cheese (optional) and share.
