2 large cucumbers, halved, seeded, and coarsely chopped

3 tablespoons lime juice
2 green onions, chopped
2 garlic cloves, coarsely chopped
10g fresh basil
15g fresh dill
15g fresh parsley leaves
55g extra virgin olive oil, extra for drizzling
1 tablespoon white wine vinegar
Salt and pepper to taste
- Combine all ingredients in a blender and blend until smooth. Add more water if you desire a thinner consistency.
- Chill for at least 4 hours.
- Serve with extra cucumber slices, yogurt, fresh herbs, and a drizzle of olive oil.
