Ingredients
200g FAGE Total
1 tbsp olive oil
1 red onion, finely sliced
1 clove garlic, crushed
400g sweet potato, peeled, diced
1pt vegetable stock
Salt & pepper

Steps
- In a heavy saucepan heat the oil on a medium heat, add the onion and garlic and sautee until soft.

Add sweet potato and cook for a further 1-2 minutes. Then add the stock, bring to the boil and simmer until the sweet potato is soft.

Once cooked remove from the heat and liquidise.
- Stir in the yoghurt, season and serve immediately. Do not re-boil as the soup may split.
