Nesselrode Pudding

A dried fruit, rum and yoghurt frozen dessert. Simple to make but very delicious!

Ingredients

500g FAGE Total

150g dried mixed fruit, chopped small

3 tbsp rum, brandy or orange liqueur

Zest of 1 orange

250g light condensed milk

Mixed fruit, to serve 

    Steps
  1. Mix the chopped fruit and rum in a large bowl. Leave for 2 hours until the liquid has soaked up. Add the remaining ingredients and stir well.
  2. Spoon into a lightly oiled 800ml-1 litre pudding basin or individual pudding moulds (approximately 100ml each). Freeze for 4-6 hours until set. Transfer to the fridge for 10-15 minutes before turning out from their moulds. If the puddings don’t remove easily, rub the outside of the mould with a cloth dipped in hot water.
  3. To serve, scatter some fresh fruit.
