Pastrami, Emmental & Toasted Onion Sandwich with Apple & Horseradish Slaw

Now this is what we call a sandwich! Filled with smoky pastrami, emmental, onion and a Total Yoghurt, apple and horseradish slaw.


For the Sandwich:

1 red onion, sliced 1cm thick

1 tsp sunflower oil

4 large slices crusty multi-seed bread

70g Emmental cheese, grated

8 slices pastrami

Handful rocket
For the Slaw:

100g FAGE Total

1 apple, cored & diced

  1. Heat a non-stick griddle pan. Brush the onion slices with oil, place on a griddle and cook over a medium heat for 10-12 minutes, turning once. When the onions are cooked, toast one side of each slice of bread.
  2. To make the slaw, mix together the apple, horseradish sauce and FAGE Total yoghurt, then season.
  3. Heat the grill to high. Sprinkle cheese over the un-grilled side of two slices of bread and grill for 1-2 minutes.
  4. Top each grilled cheese slice with pastrami, onions, rocket and the slaw. Top with remaining bread and serve.
