Spinach, Feta & Artichoke Open Sandwich


5 tbsp FAGE Total

Handful of baby spinach, finely chopped

2 spring onions, sliced

Seeded bread, lightly toasted

100g feta, crumbled

4 antipasti chargrilled artichoke hearts, drained but reserving 1 tbsp of the oil

  1. Mix together the spinach, FAGE Total yoghurt and spring onion. Spoon onto the bread and top with the crumbled feta.
  2. Cut the artichoke hearts into quarters and place into the bread.
  3. Drizzle with a little of the reserved oil and serve immediately.
