Spinach, Feta & Artichoke Open Sandwich
5 tbsp FAGE Total
Handful of baby spinach, finely chopped
2 spring onions, sliced
Seeded bread, lightly toasted
100g feta, crumbled
4 antipasti chargrilled artichoke hearts, drained but reserving 1 tbsp of the oil
- Mix together the spinach, FAGE Total yoghurt and spring onion. Spoon onto the bread and top with the crumbled feta.
- Cut the artichoke hearts into quarters and place into the bread.
- Drizzle with a little of the reserved oil and serve immediately.
