Yoghurt Chicken Salad Baguette Filling

10 minutes (25 minutes including chicken roasted)

300g chicken breast, cooked and cubed

½ onion, finely chopped

1 small apple, cored and finely chopped

75g dried cranberries

50g flaked almond

1 tbsp lemon juice

½ tsp garlic powder

salt and pepper

wholemeal baguette, buttered

  1. Mix together the chicken, onion, apple, cranberries, almonds with the yoghurt. Add the lemon juice, garlic powder and season with salt and pepper. Use as filling for baguettes or sandwiches.
