Cookie fruit cake

Ingredients

Cookie base:

250g all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

100g unsalted butter, softened

60g FAGE Total yoghurt

200g light brown sugar

100g caster sugar

1 teaspoon vanilla extract

2 large eggs

 

 

Topping:

150g softened cream cheese

150g FAGE Total yoghurt

120 grams powdered sugar

1 tsp vanilla extract

Pinch of salt

150 grams strawberries

125 grams raspberries

80 grams blueberries

80 grams blackberries

    Steps
  1. Preheat oven - 200 degrees
  2. For the cookie base, whisk together the flour, baking soda and salt
  3. Beat the butter, yoghurt, brown sugar, sugar and vanilla until light and fluffy
  4. Add the eggs one at a time, mixing well after each addition. Gradually add the flour mixture
  5. On a clean surface sprinkle some flour and roll out the cookie dough - about 10-inches
  6. Transfer the dough - a 10-inch pizza pan and bake for 25 - 30 minutes or until the edges are
    golden brown
  7. In a large bowl whisk together cream cheese, yoghurt, sugar, vanilla extract and salt
  8. Chill the yogurt mixture until the cookie is completely cooled
  9. Spread the yogurt mixture onto the cookie and decorate with berries
  10. Keep refrigerated until ready - serve
