Layered Berry Burst Smoothie

Ingredients

Smoothie:

Blueberries, frozen or fresh

1 small raw beet, cut in half

1 banana, frozen or fresh

425g cups coconut milk, or milk of choice

85g FAGE Total yoghurt 0%, 2%, 5%

1 tablespoon elderberry powder (optional)

1 tablespoon vanilla collagen powder (optional)

For the layers:

85ml coconut milk, or milk of choice

85g FAGE Total yoghurt 0%, 2%, 5%

85g homemade blueberry glaze (recipe below) OR ready-to-use blueberry coulis  

Blueberry glaze:

Blueberries, fresh or frozen

2 tablespoons water

2 tablespoons maple syrup, agave nectar, or honey

    Steps
  1. For the blueberry glaze (if made home): Add 85g of berries, water, and maple syrup into a small saucepan. Cook for about 10 minutes at medium-low heat. Add additional blueberries and cook for another 8 minutes. Serve warm or cold.
  2. Place beet, banana, blueberries, coconut milk, yoghurt and elderberry and collagen powders (optional) in a blender and blend until smooth.
  3. In a small bowl, mix coconut milk and yoghurt until smooth.
  4. Add the coconut and yoghurt mixture into a glass and mix with a spoon. Add the blueberry glaze/coulis and smoothie. Serve immediately.
