Grilled pineapple with honey & walnuts, served with vanilla yoghurt

A tropical treat for breakfast, snack or dessert

1 small pineapple, peeled & cut into 8 slices

½ vanilla pod, seeds only, or 1 tsp vanilla extract

3 tbsp honey

30g walnuts, chopped

40g pomegranate seeds 


  1. Heat a griddle pan until very hot, add pineapple in batches, cooking for 1-2 minutes on each side until char lines appear.
  2. Meanwhile, mix vanilla into the yoghurt with 1 tbsp honey. Place the pineapple on a serving plate, top with the yoghurt and drizzle with the remaining honey. Scatter over the walnuts and pomegranate seeds and serve.
