Scrambled Eggs with Smoked Salmon

¼ bunch chopped chives
8 slices Scottish smoked salmon
4 multigrain muffins
Salt and pepper to taste
- Crack the eggs into a bowl and whisk with milk to make basic scrambled egg mix, season to taste.
- Melt the butter in a non-stick saucepan and pour in the egg mixture and cook until it scrambles, then fold in 100g of yoghurt, followed by the chives, set to one side to stay warm.
- Cut the muffins and toast on both side.
- Spread the toasted muffins with a think layer of FAGE Total yoghurt; arrange the smoked salmon on each muffin. Then dress with a spoonful of the scrambled egg.
